There are a variety of filling styles, including buttercreams, ganaches and caramels. Many of the macaron recipes include secondary fillings like cookie dough, jam, caramel, gelee, brownie bits, etc. There are also TWO leftover scraps recipes to help guide you how to use up some random extra pastry bits in your kitchen!
