The trick is to understand how to use up all of those extra pieces, corners, tops and sides to make sure you don’t have any waste in your kitchen.
This ebook covers everything you need to know about using cake scraps in your kitchen and letting nothing go to waste while creating additional, delicious recipes!
The book begins with an overview and some basic information. We will cover things like what cake scraps are, why you might have them, how to store them, what to do with them, what other scraps you might have, etc.
After that, we will get into seven basic cake recipes. These are the cake scraps I use as the base to demonstrate all of my cake scraps recipes! It is entirely up to you whether you want to use my exact recipes in your kitchen, or follow the notes in each cake scraps recipe regarding other similar types of cake scraps you could use. These basic recipes all come from ebooks (especially my Patisserie Macarons ebook) and my pastry subscription Trouvaille, so some of the recipes might seem familiar - and might be especially useful if you use those recipes!
Then we will get into the cake scraps desserts following three categories: 1) Tiramisus, Trifles and Verrines, 2) Cake Cookies and 3) Cake Truffles. Each of these eight recipes comes with a video tutorial, step-by-step instructions, plenty of photos, and notes regarding adaptations.
Finally, we will conclude with a discussion about yields. I talk about yields all the time - and how they can be tricky as many recipes will vary greatly from person to person and kitchen to kitchen - but now I really want to get serious with you and help you create a system to monitor your own pastry yields more carefully for the most successful, organized kitchen possible.
